So I have seen people make just a straight pipefor there intake and just a regular filter... did the buy an after market maf sensor what?

Probably not. Most likely they either converted to Gen3 electronics (which uses a MAP sensor), or they are running a standalone (which also uses a map sensor usually).

What all is exchanged when you say 3rd gen electronics?

Converting ecu, intake temp, map sensor, igniter, fuel injectors, and corresponding wiring over to the 3rd gen 3sgte spec.

Is it worth the effort or just more convenient for things like the map sensor

Worth the effort, especially if you have a larger turbo.
Just finished up mine before I stuck it in the garage for the winter.
Ran a whole lot better [my turbo was pulling more air than the AFM could measure].

But if you're planning on all that power you need to forget about the ST205 electronics and go right to a stand alone.

I'll probably just get a stand alone... will I still need 3rd gen electronics or no

If you go stand alone you are replacing the ECU. So you probably wouldn't need anything. However, there is a thread about eliminating the MAF on here that may be helpful.
